Make mouthwatering tacos, burritos and more - Vejje style!
Ingredients
  • 1 Bag (8 oz.) DRY Vejje Beef-Free Mix
  • 1 & 1/3 Cups HOT tap water
  • Taco Seasoning Use amount needed to make the equivalent of 1 & 1/2 pounds ground beef (See note below)
  • 2 TBSP Olive oil
  • 1 & 3/4 Cups Water
  • Optional toppings (shredded lettuce, diced tomatoes, vegan sour cream)
  • Taco Shells (Or Tostada Shells)
Instructions
  1. In a large bowl mix the dry Vejje Beef-Less Mix with 1 & 1/3 cups hot water and 2 tablespoons oil and stir until fully mixed.
  2. Cover and set mixture aside for 25 to 30 minutes.
  3. Using your hands or a large spoon, crumble the hydrated Vejje into a preheated lightly oiled pan and cook for 3 to 5 minutes, stirring often.
  4. Add the taco seasoning mix and 1 & 3/4 cups water and bring Vejje to a boil.
  5. Reduce heat and simmer uncovered for about 3 to 5 minutes, stirring occasionally. Add more water, a tablespoon at atime if the mixture gets dry.
  6. Remove from heat and let rest for several minutes before spooning into warmed taco shells.
  7. Serve in warm taco shells with one or more of your favorite toppings (shredded lettuce, diced tomatoes, shredded vegan cheese).

NOTE: Use your favorite commercial or homemade taco seasoning mix to make Vejje Tacos.
