Ingredients
- 7 to 8 Shredded or Finely Chopped Vejje Chicken Patties prepared & cooked according to directions on package (The equivalent of One 8 Oz. Bag)
- 1/2 cup Sweetened Dried Cranberries
- 1/4 cup Scallions, sliced
- 1/2 cup Vegan Mayo (your favorite brand will do)
- 1/8 tsp Nutmeg
- 1/4 cup Celery (Diced or chopped finely)
Instructions
- Combine all ingredients in a bowl and stir well.
- Taste and adjust as desired.
- Refrigerate until ready to serve. This salad is best served several hours, or the day after, it is made to allow the flavors to meld.
TIPS
- Vejje Chicken-Less Salad makes a delicious sandwich. Or serve the salad in pita bread, or atop whole Bibb or other lettuce leaves.
- Vejje Chicken-Less Salad lasts about 5 days refrigerated. Do not freeze.
