A light nutritious meal perfect for lunch.
Ingredients
  • 7 to 8 (1 bag) Shredded or Finely Chopped Vejje Chicken Patties prepared & cooked according to directions on package (We like to use a food processor to finely chop/shred the Vejje Chicken)
  • 1/2 cup Sweetened Dried Cranberries
  • 1/4 cup Scallions, sliced
  • 1/2 cup Vegan Mayo (your favorite brand will do)
  • 1/8 tsp Nutmeg
  • 1/4 cup Celery (Diced or chopped finely)
Instructions
  1. Combine all ingredients in a bowl and stir well.
  2. Taste and adjust as desired.
  3. Refrigerate until ready to serve. This salad is best served several hours, or the day after, it is made to allow the flavors to meld.
TIPS
  1. Vejje Chicken-Less Salad makes a delicious sandwich. Or serve the salad in pita bread, or atop whole Bibb or other lettuce leaves.
  2. Vejje Chicken-Less Salad lasts about 5 days refrigerated. Do not freeze.
