Ingredients
  • 1 bag (8 oz.) Vejje Chicken-Free Mix
  • 1 1/4 Cups hot water
  • 2 TBSP Olive oil
  • 1 Jar Your favorite marinara sauce (commercial or homemade)
  • 1/4 to 1/2 Cup Shredded Vegan mozzarella style cheese (preferable one that melts)
Instructions
  1. In a bowl combine DRY Vejje Chicken-Free Mix with water and oil. Stir until fully mixed.
  2. Spoon mixture into 1/4 cup measuring spoon, packing firmly. Empty cup onto parchment paper, flatten by hand and form into 7 patties or cutlets. LET PATTIES REST FOR 15 MINUTES.
  3. Oil a 12 inch non-stick skillet and heat over medium heat. Cook patties until bottoms begin to brown, about 3 minutes. Flip patties over and brown other side.
  4. Add 1 cup marinara sauce and 1/4 cup water to pan. Partially cover skillet leaving a 2 inch opening to vent. Cook for 5 minutes over Medium-Low heat.
  5. Cover pan completely and cook an additional 8 to 10 minutes.
  6. Uncover, flip patties over and add about 1/2 cup additional marinara sauce. Cook for a couple minutes more.
  7. Sprinkle a little shredded vegan cheese over each cutlet. Cover pan and cook until cheese starts to melt. Remove pan from heat and let rest for 10 minutes before enjoying.
Recipe Notes

Serve Vejje Chicken-Free Italiano Cutlets over any cooked pasta, in a hoagie roll, or with a simple vegetable and salad.
