Ingredients
  • 5 Vejje chicken-free patties Prepared & cooked & cut into bite sized pieces (each bag makes 7-8 patties - save the extra for a sandwich!)
  • 1 (4 oz.) can Chopped Green Chiles
  • 1 (4 oz.) can Sliced Black Olives (optional - add more to taste)
  • 2 (15 oz. each) cans Mild Green Chile Enchilada Sauce (we like Hatch)
  • 2 cups Cooked White or Brown Basmati Rice (cooked ahead of time)
  • 12 Small Corn Tortillas (preferably fresh)
  • 6 oz. Shredded vegan cheese (we use a blend)
Instructions
  1. Preheat the oven to 425 degrees.
  2. Coat a 9 x 13-inch baking dish with cooking spray.
  3. In a bowl, combine the cooked and cut Vejje Chicken, green chiles (and black olives if using) with one-half of one can of enchilada sauce.
  4. Add the cooked rice and stir.
  5. Spread the other one-half can of enchilada sauce on the bottom of the prepared baking dish.
  6. Top with 6 tortillas, overlapping them in the dish.
  7. Spread the Vejje Chicken & Rice mixture on top of the tortillas.
  8. Top that with about half of the shredded cheese, followed by the remaining 6 tortillas.
  9. Pour the remaining can of enchilada sauce over the tortillas and sprinkle the remaining vegan cheese on top.
  10. Cover with foil and bake in a 425 oven for about 35 minutes or until bubbly and heated through.
Recipe Notes

You can prepare this dish the night before and put it in the refrigerator.  Let the cold pan warm a bit before putting it in the preheated oven.
