Ingredients
- 1 bag (8 oz) DRY Vejje Beef-Free Mix
- 1 3/4 cups hot water
- 2 TBSP olive or canola oil (use 1 TBSP for reduced oil)
- 1/2 cup finely chopped onions
- 1 can (15 oz.) green enchilada sauce
- 3 TBSP taco seasoning
- 1 or 2 cans (15 oz. each) refried pinto beans
- 1 cup vegan cheddar cheese shredded
- 1 package warm flour tortillas
Instructions
- Place the 8 oz. bag of Vejje Beef-Free Mix in a bowl and add the hot water and oil. Stir until fully mixed then cover and set aside to hydrate for 25 to 30 minutes.
- In a large skillet, sauté the onion in a little oil or water.
- Stir in the enchilada sauce, taco seasoning and refried beans.
- Crumble the hydrated Vejje Beef Crumbles into the skillet. Add the shredded vegan cheese and stir to combine. Simmer mixture a few minutes or until heated through.
- Spoon ½ cup Vejje Burrito mixture down the center of each warmed tortilla. Fold ends and sides over filling. Wrap each burrito in wax paper and foil.
- You can now freeze the burritos.
- To use frozen burrito, remove foil and heat burrito in microwave. Cover with salsa and/or additional vegan cheese if desired.
Recipe Notes
These burritos can be frozen for 3 months and enjoyed anytime. To use frozen burritos, remove foil and place burrito on a microwave safe plate. Microwave on high for 2 to 3 minutes, turning once. Let rest for 20 seconds.
