Ingredients
- 1/4 Cup Canola Oil
- 2 Cups Onions, thinly sliced
- 1 TBSP Minced Garlic
- 1 1/2 Cups BBQ Sauce (Use homemade or your favorite commercial sauce)
- 1/2 Cup Water
- 7 - 8 Vejje Chicken-Free Patties (1 bag prepared and cooked according to package directions) (You do not need to brown patties. Skip this step and proceed with directions)
Instructions
- Heat a pan over medium-low heat and add the canola oil and sliced onions.
- Sauté the onions stirring occasionally until onions are very soft and nicely browned, about 15 to 25 minutes.
- Cut the prepared Vejje Chicken-Free Patties into thin slices (or chop it up) and set aside.
- Add the Vejje Chicken to the onions along with the BBQ sauce, water and garlic.
- Reduce heat to low and cook for 15 minutes. Stir occasionally to prevent burning, but try not to stir too much as you want texture to resemble “pulled pork”.
TIPS
- Leftover Vejje BBQ Chicken freezes beautifully.
- Serve Vejje BBQ Chicken with cornbread or fresh corn on the cob.
- Vejje BBQ Chicken also tastes great on a toasted bun.
