Ingredients
  • One 8 Ounce bag DRY Vejje Chicken Mix (8 Ounces)
  • 1 1/4 Cups HOT tap water
  • 2 Tablespoons Olive oil (use 1 Tablespoon for reduced oil)
Instructions
  1. Place all ingredients together in a large bowl. Stir until fully mixed.
  2. Spoon mixture into 1/4 cup measuring cup, packing firmly. You should have 7 to 8 patties depending on how firmly you pack the mixture. Empty each 1/4 cup measure onto parchment paper or a clean counter. Flatten into patties using your hands or a spatula. LET PATTIES REST FOR 15 MINUTES! ************************************** AT THIS POINT YOU CAN COOK VEJJE CHICKEN-FREE PATTIES IN A SKILLET ON THE STOVE, or BAKE THEM IN THE OVEN ACCORDING TO EASY BAKE DIRECTIONS BELOW.
  3. To cook patties in a SKILLET, pre-heat a lightly-oiled 12 inch skillet over MEDIUM-LOW heat. Do not cook patties until the skillet/oil is pre-heated.
  4. After the skillet is pre-heated, transfer patties to skillet. Cook until the bottoms begin to brown (approximately 2 to 3 minutes). Flip the patties over and brown other side, adding additional oil if necessary.
  5. Pour 1/2 cup cold tap or filtered water over the patties and partially cover the skillet leaving about a 2 inch opening to vent. Cook patties over LOW-MEDIUM heat for about 8 minutes. The water should evaporate.
  6. Flip patties over adding, add an additional 1/2 cup water and cooking as directed above. (NOTE: If using a smaller than 12 inch skillet and cooking in batches use less water)
  7. Remove the patties from the pan. LET REST 5 to 10 MINUTES BEFORE SERVING.
  8. Cook all 8 patties. Refrigerate uneaten patties for up to 7 days or freeze for up to 3 months.
EASY BAKE DIRECTIONS
  1. To BAKE Vejje Chicken-Free Patties in the oven, follow the first two steps above. While patties are resting, preheat oven to 400 degrees. Lightly oil a 9 x 13 baking pan and place all the patties in the pan (it is ok if patties are touching). Pour 3/4 cup of water or vegetable broth over patties and bake for 20 minutes. Remove patties from pan and let rest 5 to 10 minutes.
Recipe Notes

Serve the patties with your choice of sauce, like Chef Ron Pickarski’s amazing Piccata Sauce, in a sandwich, or slice the cutlets into nuggets or strips and serve with BBQ sauce. 

Vejje Chicken is also wonderful in your favorite salad recipes. To make Vejje Chicken Salad, simply finely dice or chop the Vejje Chicken (or place it in a food processor) and use it in place of chopped and diced chicken in your favorite recipe. Or add cubes of cooked Vejje Chicken to your favorite green or grain salads.
